Sausage Casserole

Sausage Casserole
Ingredients
  • Frozen & Fully Cooked Gourmet Pork Sausages
  • Button onions
  • Carrot
  • Mushrooms
  • Garlic
  • Bay leaf
  • Salt & Pepper
  • Flour (to thicken)
  • Butter
  • Stock
  • Potatoes
Method
  1. Cook onions until golden using all the butter then add the flour, garlic and mix well with wooden spoon. Pour in stock, bring to the boil and add mushrooms and carrots and cook.
  2. Meanwhile microwave Frozen & Fully Cooked Gourmet Pork sausages to a core temperature of 72˚C.
  3. Add sausages to casserole mixture and serve with either a creamy mashed potato or buttered new potatoes.
The Snowbird says: For a richer casserole add red wine and serve in the dish with chunky bread.

Vietnamese-Style Beef Salad

Vietnamese-Style Beef Salad
Ingredients
  • Frozen & Fully Cooked Meatballs
  • Red Chillies. Chopped and sliced
  • Garlic
  • Oyster Sauce
  • Lime
  • Cooked rice noodles
  • Carrots cut into julienne
  • Beansprouts
  • Mint leaves
  • Unsalted Peanuts
Method
  1. Fry the chopped chilli and garlic to soften. Add the oyster sauce and lime juice and cook for 5 minutes.
  2. Meanwhile microwave Frozen & Fully Cooked Meatballs to a core temperature of 72˚C.
  3. In the meantime assemble the salad, place noodles at bottom of bowl, top with meatballs and sauce, then place a handful of carrots, beansprouts and mint leaves.
  4. Sprinkle with peanuts and sliced chilli. Before eating toss all the ingredients together.
The Snowbird says: Add spring rolls as a side dish.

Spicy and Chunky Chilli

Spicy and Chunky Chilli
Ingredients
  • Frozen & Fully Cooked Gourmet Pork Sausage slices
  • Chopped Onion
  • Green Pepper
  • Garlic
  • Cumin
  • Chilli Powder
  • Tomato Puree
  • Chopped Tomatoes
  • Kidney Beans
Method
  1. Gently fry onion, garlic and green pepper until soft.
  2. Add chilli powder and cumin, then gradually stir in tomato puree and chopped tomatoes and kidney beans and heat through.
  3. Meanwhile microwave Frozen & Fully Cooked Gourmet Pork sausage slices to a core temperature of 72˚C.
  4. Stir the sausage slices into the sauce and serve with rice.
The Snowbird says: For an alternative add a jacket potato and serve in a pasta dish.

Ingredients
  • Frozen & Fully Cooked Meatballs
  • Sausage Shape Yorkshire Puddings
  • Gravy
  • Peas
  • Mashed Potato
Method
  1. Make up the gravy.
  2. Meanwhile microwave Frozen & Fully Cooked Meatballs to a core temperature of 72˚C.
  3. Cook the peas.
  4. Prepare mashed potato
  5. Plate up with 4 to 5 meatballs into the Yorkshire pudding and add the mash and peas and pour over the gravy.
The Snowbird says: Alternatively use sausages instead of meatballs, plus other vegetables of your choice.

Cumberland Sausages with Fusilli Pasta

Ingredients
  • 2 x 70g. Frozen & Fully Cooked Gourmet Pork Sausages
  • Oil
  • Chopped onion
  • Garlic
  • Tinned chopped tomatoes
  • Thyme
  • Chilli flakes
  • Lemon zest
  • Fusilli Pasta
Method
  1. Take pre-heated pasta, boil until al dente and keep warm. Concurrently, heat oil in a saucepan and cook onion and garlic until softened. Add tomatoes, chilli flakes, thyme and lemon zest.
  2. Microwave 2 x 70g. Frozen & Fully Cooked Gourmet Pork sausages to a core temperature of 72°C, cut diagonally and place into tomato mixture.
  3. Place pasta into bowl, add all other ingredients and serve.
The Snowbird says: Sprinkle cheese on top

Gourmet Pork Sausage Teriyaki

Ingredients
  • 2 x 70g Frozen & Fully Cooked Gourmet Pork Sausages
  • Sunflower oil
  • Sesame oil
  • Thinly sliced onion
  • Crushed garlic
  • Carrot batons
  • Thinly sliced celery
  • Sliced Shitake mushrooms
  • Teriyaki sauce
Method
  1. In a wok stir fry the onion, garlic, carrot, celery and mushrooms for 2-3 minutes. Add the teriyaki sauce and bubble for a further 2-3 minutes.
  2. Drizzle with sesame oil and toss well.
  3. Meanwhile heat sausages in a microwave to a core temperature of 72°C.
  4. Plate sausages with the sauce mix and vegetables and serve immediately.
The Snowbird says: Add bean sprouts and noodles for even more flavour.

Sausage & Bacon Carbonara

Ingredients
  • 2 x 70g Frozen & Fully Cooked Gourmet Pork Sausages
  • Olive oil
  • Chopped mushrooms
  • Diced streaky bacon
  • Dry white wine
  • Crème fraîche
  • Spaghetti
  • Egg yolk
  • Chopped parsley
  • Salt & pepper
Method
  1. Cook the pasta until al dente. Heat oil in a pan and fry the bacon and mushrooms. Transfer the cooked mixture into a bowl.
  2. In the pan pour in the wine and simmer. Add the crème fraîche and cook. Heat sausages in a microwave to a core temperature of 72°C and slice diagonally and with the bacon mixture add to the pan and take off the heat.
  3. Beat egg yolk into the sauce. Season, then mix in the pasta and sprinkle with parsley.
The Snowbird says: Add freshly ground black pepper and sea salt to taste.

Spicy Sausage, Mango and Jalapeno Salad
Ingredients
  • 2 x 70g. Frozen & Fully Cooked Gourmet Pork Sausages
  • Halved cherry tomatoes
  • Finely chopped jalapenos
  • Sliced red onion
  • Roughly chopped coriander
  • Extra virgin olive oil
  • Lettuce
  • Sliced red pepper
  • Stoned, peeled and diced mango
  • Handful tortilla chips, broken up a little
  • Lime juice, plus wedges to serve
Method
  1. Heat 2 x 70g. Frozen & Fully Cooked Gourmet Pork sausages in a microwave to a core temperature of 72°C.
  2. In a large bowl put the cherry tomatoes, jalapenos, coriander, lime juice, onion and oil with some seasoning.
  3. Pop the remaining ingredients, except the tortilla chips, on top of the dressing. Gently mix the salad together to coat.
  4. Sprinkle the tortilla chips over the top and serve immediately with lime halves.
The Snowbird says: Cold sliced pre-boiled potatoes can be used instead of tortilla chips.

Sausage Spicy Bean Wrap

Ingredients
  • 1 x 70g. Fully Cooked & Frozen Gourmet Pork Sausage
  • Rinsed and drained kidney beans
  • Pinch of hot chilli powder
  • Grated cheese
  • Chopped spring onion
  • Chopped coriander
  • Handful of rocket leaves
  • Tortilla wrap
  • Seasoning
Method
  1. Put half the kidney beans in a bowl and mash them roughly with a fork. Stir in the remaining beans, chilli powder and some seasoning.
  2. Microwave 1 x 70g. Fully cooked and frozen Gourmet Pork sausages to a core temperature of 72°C and cut diagonally.
  3. Lay the wrap on a board, place the bean mixture and sliced sausage down the centre. Sprinkle over the cheese, spring onions, coriander and rocket.
  4. Roll up the wrap, tucking in the ends as you go, then slice in half and serve.
The Snowbird says: One sausage wrap is a snack and two make a Light Bite.

Sausages with Potato Salad and Mustard Dressing

Ingredients
  • 2 x 70g. Frozen & Fully Cooked Gourmet Pork Sausages
  • Walnut or hazelnut oil
  • Sunflower oil
  • Dijon mustard
  • White wine vinegar
  • Single cream
  • Tinned or pre-cooked potatoes
  • Bunch of chives, snipped
Method
  1. Put the oils, mustard and vinegar into a bowl with salt and pepper and whisk hard for 3 minutes. Stir in the cream. Keep at room temperature until you are ready to serve.
  2. Microwave 2 x 70g. Frozen & Fully Cooked Gourmet Pork sausages to a core temperature of 72°C, and cut into chunks.
  3. Halve the cooked potatoes, bring to the boil, drain and mix with the sausages and chives.
  4. Pour over the dressing, mix again and serve.
The Snowbird says: A side salad or seasonal vegetables would add plate appeal.

Sausages with Sweet & Sour Peppers

Ingredients
  • 2 x 70g. Frozen & Fully Cooked Gourmet Pork Sausages
  • Olive oil
  • Mixed peppers, deseeded and finely sliced
  • Sliced fennel
  • White wine vinegar
  • Juice of an orange
  • Tin of chopped tomatoes
  • Garlic
  • Chopped fresh parsley (plus extra to serve)
Method
  1. Heat oil in a pan and add peppers and fennel. Cover and cook gently, stirring occasionally until softened. Stir in the garlic and cook. Add vinegar and orange juice, simmer until vinegar aroma has vanished. Add parsley and tomatoes and cook for 5 minutes.
  2. Meanwhile microwave 2 x 70g. Frozen & Fully Cooked Gourmet Pork sausages to a core temperature of 72°C.
  3. Place sausages onto a plate, spoon over sweet and sour mixture and serve.
The Snowbird says: Add a portion of boiled rice.

Herby Sausage Salad

  • 2 x 70g Frozen & Fully Cooked Gourmet Pork Sausages
  • Podded broad beans
  • Sliced radishes and spring onions
  • Mint and/or parsley leaves
  • Lemon zest
  • Extra virgin olive oil
Method
  1. Briefly boil broad beans in salted water, then cool.
  2. Heat sausages in a microwave to a core temperature of 72°C and slice diagonally.
  3. Add radishes and spring onion slices to beans in a bowl, top with leaves, lemon zest and sausage slices. Season to taste.
The Snowbird says: Add a serving of buttered baby potatoes and a Light Bite becomes a meal.

Gourmet Pork Sausage Pancakes

Ingredients
  • 2 x 70g. Frozen & Fully Cooked Gourmet Pork Sausages
  • Plain flour
  • Baking powder
  • Milk
  • Melted butter
  • Sweetcorn
  • Half green pepper, finely chopped
  • Frying oil
  • Chilli flakes
Method
  1. Mix flour, baking powder, milk and butter into a smooth batter. Add sweetcorn, chilli and pepper.
  2. Meanwhile microwave 2 x 70g. Frozen & Fully Cooked Gourmet Pork sausages to a core temperature of 72°C.
  3. Meanwhile heat oil, add some dollops of sweetcorn batter to frying pan and cook quickly until crispy on each side.
  4. Serve with sausages and grilled tomatoes.
The Snowbird says: Add a green salad to increase eye appeal.

Pork Sausages with Cannellini Beans
Ingredients
  • 2 x 70g Frozen & Fully Cooked Gourmet Pork Sausages
  • Cannellini beans, drained
  • Tinned chopped tomatoes
  • Crushed garlic glove
  • Oregano and basil
  • Roughly chopped fresh parsley
  • Salt and freshly ground black pepper
Method
  1. Heat the cannellini beans, tomatoes and garlic in a saucepan with oregano and basil. Add the parsley and season with salt and freshly ground black pepper.
  2. Meanwhile heat sausages in a microwave to a core temperature of 72°C, plate, spoon the bean mixture on top and serve.
The Snowbird says: Decorate with leaves of fresh parsley and add a baked potato for a heartier meal.

Sausage Fried Rice

Sausage Fried Rice
Ingredients
  • 2 x 70g Frozen & Fully Cooked Gourmet Pork Sausages
  • Sesame oil
  • 1 whisked egg
  • Cooked rice
  • Petit pois
  • Spring onions finely sliced
  • Light soy sauce
  • Salt and pepper
Method
  1. Heat oil in a wok on high heat and fry the egg until half cooked. Add the rice, break up the egg and mix well. Add the peas and spring onions until heated through with the soy sauce.
  2. Meanwhile heat sausages in a microwave to a core temperature of 72°C and slice diagonally.
  3. Place rice and sausages into a bowl and season to taste.
The Snowbird says: Sweetcorn kernels could add a dash of colour.

Smoky BBQ Sausages with Pasta

Ingredients
  • 2 x 70g. Frozen & Fully Cooked Gourmet Smoky BBQ Sausages
  • Oil
  • Chopped onion
  • Garlic
  • Yellow and red peppers
  • Tin chopped tomatoes
  • Smoked Paprika
  • Oregano
  • Tomato puree
  • Water
  • Salt & Pepper
  • Fusilli Pasta
Method
  1. Fry onion and garlic for 3-4 mins.
  2. Add peppers fry for a further 2 mins. Add paprika, oregano, salt and pepper, tomato puree and chopped toms until sauce thickens (add water if needed).
  3. At the same time cook pasta until al dente.
  4. Heat 2 x 70g. Frozen & Fully Cooked Gourmet BBQ sausages in a microwave to a core temperature of 72°C.
  5. Add sausages to sauce, stir in pasta and serve.
The Snowbird says: Serve with a dipping sauce.

  • Chopped onion
  • Deseeded and chopped red and green pepper
  • Chopped garlic clove

  • Tinned chopped tomatoes
  • Salt and freshly ground black pepper
Method
  1. Heat oil in a pan, fry onion, peppers, chilli and garlic until softened, add tomatoes and simmer.
  2. Meanwhile microwave 2 x 70g. Frozen & Fully Cooked Gourmet Pork sausages to a core temperature of 72°C, cut diagonally and place into tomato mixture.
  3. Add the sausages to the tomato mixture, season with salt and pepper and serve.
The Snowbird says: Add a generous dollop of mash.

Tagliatelle with Sausages, Bacon, Peas and Mint

Ingredients
  • 2 x 70g. Frozen & Fully Cooked Gourmet Pork Sausages
  • Portion dried tagliatelle or linguine
  • Olive oil
  • Streaky bacon rashers
  • Single cream
  • Frozen peas
  • Chopped mint
  • Finely grated parmesan cheese
Method
  1. Boil pasta in salted water and cook until ad dente.
  2. Heat the oil in a large pan over a medium-high heat and add the bacon. Fry until golden and crispy. Stir in cream and simmer gently for a couple of minutes. Add the frozen peas and cook until tender. Remove pan from heat, drain the pasta and tip into the sauce along with the chopped mint. Stir to combine, check the seasoning and serve with the parmesan cheese sprinkled over the top.
  3. Meanwhile microwave 2 x 70g. Frozen & Fully Cooked Gourmet Pork sausages to a core temperature of 72°C. Cut into coin shapes and add to plate.
The Snowbird says: For a lighter version use light cream cheese instead of single cream.

Thai Rice & Noodle Salad

Ingredients
  • 2 x 70g Frozen & Fully Cooked Gourmet Pork Sausages
  • Portion of vermicelli rice noodles
  • Portion of bean sprouts
  • Rind and juice of 1 lime
  • Thinly sliced red onion
  • Muscovado or soft brown sugar
  • Soy sauce to taste
  • Little gem lettuce, leaves separated and roughly torn
Method
  1. Put the noodles and beansprouts in a heatproof bowl and cover with boiling water. Leave for 4 minutes, or until the noodles are tender. Drain, then cool under cold running water and drain again. Return to the bowl.
  2. Meanwhile heat sausages in a microwave to a core temperature of 72°C and slice diagonally.
  3. Stir together the lime rind and juice, soy sauce and sugar. Stir into the noodles with the red onion and lettuce.
The Snowbird says: Serve with a sweet chilli dipping sauce.
